Amuse Bouche
- Assorted homemade pate on a pastry cup.
Old Mill Frog Legs with Native Bread on a skewer
- Served with red pepper corn and black garlic butter, wild honey.
Pheasant Under Glass
- Slow roasted Pheasant served with morel hunter sauce.
Hearth & Field Roulade
- Stuffed quail with wild rice served with cranberry – port reduction and rabbit roulade served with Dijon espuma.
Golden Ember Duck
- Roasted duck and baked garlic broccolini.
Hunter Family Feast Style
- Untamed Duo: Slow grilled Venison, drizzled with Juniper berry demi-glaze and open flame grilled wild boar sausage with James Beard horseradish sauce.
- Tallow Pilaf: Spiced rice with roasted beef tallow, charred corn, Brussels sprout and blistered cherry tomatoes.
- Earthen Glaze Roasted: Wild honey roasted beet root, rutabaga and fingerling potatoes, in duck fat topped with roasted quinoa.
Wild Orchard Fold
- House-made rhubarb and berry strudel.
