Peruvian inspired Ceviche with Hokkaido scallop, fresh fillet of snapper marinated in Lethe de Tiger married with assorted Thai fresh Herbs, garnished with citrus caviar and fresh strawberry.

Hand Cut Fresh Tenderloin “Steak Tartar” inspired, served in a powerful Umami Beef Broth Vietnamese style with fresh Shimeji Mushroom and Burnt Onion

Char-Broiled Spanish Iberico Pork
Char-Broiled Iberian Peninsula pork free-range and acorn fed, enhanced with roasted black garlic Pedro Ximenez sauce. Served with mini potatoes croissant, and parsnip puree. Served Medium rare to melt in your mouth.
